Description
“This Tempranillo is from the Pokolbin Mountain Vineyard, owned by the Tinkler family, in the Hunter Valley. It is made with 100% whole bunch inclusion, but crushed fruit. This adds the spice and complexity of stem inclusion, alongside a balanced tannin extraction from the crushed grapes. It underwent spontaneous fermentation due to native yeasts. No finings are used.
After the initial alcoholic fermentation on skins, the must was basket pressed to extract the wine. It was then racked into older French oak – 1 puncheon (500L), and 1 barrique (228L) and underwent malolactic fermentation. Following completion of MLF the wine was racked, sulfured, and returned to oak. The wine matured in barrel for 10 months before being blended, filtered, and bottled.
The wine has a lifted nose of licorice and cardamom spices. The palate is lighter framed with notes of star anise, candied orange peel, and raspberry jus. Firm tannins provide a strong backbone and wrap the palate in a structural bow.” Kate Sturgess – Bani Vino Proprietor & Winemaker
