Description
“This Chardonnay is from the Stanleigh Park Vineyard in the Hunter Valley. It is made in an oxidative style, with no sulphur added until after fermentation. The Chardonnay juice is fermented entirely in French oak barriques (228L) with spontaneous fermentation due to native yeasts. No finings are used.
After the initial alcoholic fermentation half of the barrels were sulphured and topped, while the other half underwent full malolactic fermentation, with lees stirring every two weeks. This builds body and richness into the wine while maintaining a freshness to the fruit and acid line. The wine matured in barrel for 10 months, with 12% being new Ermitage Allier oak, before being blended, filtered, and bottled.
The wine has notes of flint and honeysuckle on the nose. A creaminess across the palate combines with parmesan cheese-crystal crunchiness. Pickled lemon fruit adds vibrancy and weight to the palate.” Kate Sturgess – Bani Vino Proprietor & Winemaker
