Description
'This Junmai Daiginjo is a very special and limited Sake from Yoshinogawa.
‘Hizoushu’ means ‘Treasured Sake’. On the front label is the Kawakami family’s crest (owners of Yoshinogawa since 1548), and it is said that it was used as a toast to celebrate the normalization of diplomatic relations between Japan and China.
This sake is produced with Niigata’s Sake rice called Koshitanrei (a strain created from a blend of Yamadanishiki x Gohyakumangoku).
Carefully crafted and matured for 3 years at minus 5 degrees to integrate all the wonderful Sake elements slowly.
The palate is silky with delicate texture and flavours of tropical fruit like mango and yellow peach. It is a very elegant style, yet very complex with a clean long finish.
Food suggstion: Beef Carpaccio, Grilled meat and fish, cheese.
