Established in 1875, Shichida Sake is created by Tenzan Shuzo in Saga on the southern island of Kyushu. Current owner Shichida san is 6th generation.
Shichida’s goal is for their sake to have a clean juicy mouth feel with deep flavour with lots of umami and elegant acidity. Whilst respecting tradition, they bring a modern approach to the production of their Sake.
The brewery sits alongside the Gion River, with the nature around the brewery being famously clean and pure in Japan. Shichida only use local rice for their sake, and it is a creation from their natural environment. Shichida’s house style is juicy and full flavoured with good structure. They do not take charcoal filter process for all their sake so lots of flavour remains in their Sake, and the structure in Sake comes from local medium hard local mineral water.
Tasting Comment:
Sudachi is a native Japanese citrus fruit that looks like a lime. Yuzu fruit is in the same family.
Shichida uses Sudachi which is 100% from their local Saga.
This Sudachi liquor has been made with Tokubetsu Junmai Sake base and has a very refreshing lemony, citrus-like aroma, with a delicious balance between tight acidity and sweetness, and finishing with a clean bitterness at the end. It is refreshing to have chilled Sudachi straight or over ice, or with cold sparkling water or soda. Or you can create any kind of beautiful Sudachi cocktail.
