The Terroir de Milly Petit Chablis is a true gem in the world of Chablis wines. Sebastian Dampt's family has been making wines in Chablis for over 150 years and the intergenerational experience is plain to see.
This exquisite wine is made from 100% Chardonnay and showcases the unique characteristics of the Milly plateau. Grapes are sourced from a vineyard spanning 0.30 hectares and vines aged 10 years. Crafted with meticulous care, the grapes undergo gentle pressing in a pneumatic press, followed by a 12-hour rest at a controlled temperature for natural sedimentation.
Next, fermentation takes place for 15 days at 20°C in stainless steel tanks in which time the wine undergoes 100% malolactic fermentation, enhancing its complexity. After 6 to 8 months of aging on fine lees in temperature-controlled stainless steel tanks, the wine is bottled with low pressure to preserve its distinct character.
