Introducing the Vendange Nocturne Melon Blanc from Domaine de la Combe, a captivating expression of Loire Valley terroir. This wine originates from the picturesque village of Saint-Fiacre sur Maine, where the rivers Sèvre et Maine converge, specifically the "La Cantrie" terroir.

The grapes were carefully harvested during the cool night of September 8th, ensuring they retained their freshness. They underwent a gentle 12-hour maceration on the skins, followed by pressing and fermentation using only natural vineyard yeasts. Thanks to the northern exposure of the terroir, the ripening process was extended, resulting in a modest 11% natural alcohol content.

No aging was needed for this wine; it was bottled in early December to preserve its primary fruit flavours. With an alcohol content of 11.17%, total SO2 of 48 mg/l, and total acidity at 3.95 mg/l, this wine strikes a perfect balance between nature and craftsmanship.
