Goodbye Winter... Hello Spring!

With Winter coming to an end soon, it's time to say goodbye to the ugg boots and track pants and say hello to the colour of spring full of outdoors, barbeques, friends and fun.

Welcome Spring and all of its good times by serving up three classic cocktails to get you buzzing for the season of new beginnings.

The Pimm's Standard (with a twist)

An absolute classic and great for any occasion, we have put our own special twist on this Spring essential. Bacardi is a versatile spirit that adds the perfect punch, fresh passionfruit brings fruity goodness and they both slide in nicely to bring it all home. Don't forget the fresh squeeze of lime, sprigs of mint and you'll be on Cloud 9!

Just fill a 1 litre jug with ice and add:

• 120mL Bacardi Carta Blanca
• 180mL Pimm's No.1
• 160mL pineapple juice
• Pulp from 1 ½ passionfruit
• A squeeze of ½ a fresh lime

Top it with lemonade, fresh mint, stir it all together and enjoy in a highball

Tequila Sunrise

Born in 1963, this retro cocktail has done the rounds all over the world and is a great combination of flavours. All you need is the grenadine sweetness, a good tequila kick, a dash of fresh and you’ve got yourself a mighty Tequila Sunrise. Mix it together and it'll make you feel like you're sitting on the beaches of Bondi on a beautiful afternoon.

Fill a tall glass with ice and layer in:

• 120mL fresh orange juice
• 60mL Patron Silver Tequila
• A dash of Angostura bitters
• 10mL grenadine
• A slice of orange

The Sidecar

A sweet and sour refresher, this classic has been around for 100 years and brings together Cognac, Cointreau and lemon juice. For the sweet kick, just add some sugar to the rim of your glass and enjoy. This super simple combination is a great way to start the night and with the cocktail glass, it feels a little fancy.

Shake with ice and strain into a cocktail or martini glass:

• 30mL Remy V.S.O.P Cognac
• 30mL Cointreau Orange Liqueur
• 30mL lemon juice
• Sugar for the rim
