Kimoto and Jikomi refer to the traditional method used to make this sake. This sake has pale golden colour with an earthy mushroom aroma. Full flavoured with spice, umami, and clean acidity, a warm mouth feel and a long, soft finish.
Food pairings: Traditional Japanese dishes like Tuna sashimi, Bonito tataki or vinegared mackerel. Or grilled fish, miso based soups, roasted chicken and cheese.
